As an ambassador for the "C’est de la dinde!" campaign, Mallory Gabsi, a young Belgian chef and Top Chef season 11 contestant, went to meet turkey farmers in order to immerse himself in the European poultry industry and find inspiration for original turkey recipes. Gourmet dishes that allow us to rediscover the advantages and benefits of this meat, its ease of preparation and its nutritional benefits.

In addition to contributing to a varied diet, turkey is a lean, flavorful meat that's rich in protein and packed with vitamins and minerals. It's a great way to enjoy a light meal. Turkey is a source of energy and contributes to the proper functioning of the nervous system, which allows the body to combine physical and mental fitness.

Anti-waste cordon bleu

During his visit to Sirha Lyon on Friday, September 24, the chef will offer visitors his revisited turkey cordon bleu. This cult dish that takes us back to childhood has a special feature: it doesn't require breadcrumbs, because Mallory Gabsi uses the skin of the turkey to recreate this tasty crunch. It's an anti-waste recipe that fits in with the European poultry industry's desire to move toward more sustainable, ethical production.
